In a food industry which is increasingly concerned with those who choose to cut out the meat from their diet, the pea stands as an alternative both at a nutritional level since it provides a plant protein with a very complete amino acid profile, and at technological level since it provides texture to the food.
Quimidroga represents the company Nisco Foods, the products portfolio of which consists in functional ingredients sustainable with the environment and natural, produced from concentrates of pea. Peas are processed through a dry fractionation technology not entailing the use of chemicals and water.
Nisco Foods has a varied portfolio of pea-based products, each one exclusively designed to achieve specific technological and nutritional functions.
TPP55™: texturized pea protein at 55%. It is perfect in formulations with low meat inclusion and/or 100% meat-free (vegan and vegetarian formulations). The product is available in several granulometries from chunks (coarser granulometry) to a granulometry inferior to 2,5 mm. TPP55™ contains important vitamins such as folate and minerals such as iron and potassium.
There is also a variant of the same product called Vegtein68, available in format chunks and with a protein content of 68%.
Protex®: extruded pea protein in powder. Protex® contains around 55% of protein and is rich in essential amino acids as lysine, arginine, leucine and isoleucine. Furthermore, Protex® contains dietary fibre, medium-low glycaemic starch and several essential minerals and vitamins. Protex® is interesting for applications such as protein shakes, energy bars, gluten-free formulations and bakery products.
Startex®: extruded pea starch, clean label. High functionality and protein content of 14%. High cold water binding, formation of stable gels (water/oil) and very low syneresis. Startex® can be used in meat products, soups/creams, pasta, bakery/confectionery and it creates gels and/or provides viscosity to various applications.
Peatex®: it is produced by the use of pea flour extrusion. Peatex® has excellent binding capacities to be used in sausages and other minced meat products. Peatex® contains around 22% of proteins of high biological value, dietary fibre and carbohydrates with a low to moderate glycaemic index.
